Once both sides of the tuna are seared to hold in all those delicious juices you can take the whole pan and throw it in a preheated oven or grill until the middle is cooked how you like. (lemon)

Actually searing does not keep in juices but it does amplify flavour and create depths of texture, hence the feeling of 'sealed in juices'.
