  • Actually searing does not keep in juices but it does amplify flavour and create depths of texture, hence the feeling of 'sealed in juices'.

  • the fish looked good and dry. I would use a little less oil. Some spices in the oil depend on your taste (minced garlic, pepper, salt, old bay seasoning). Specify the heating range and time per side. Id say medium-high heat for about 15-20 seconds on each side. Make sure your pan and oil is already hot! Once both sides of the tuna are seared to hold in all those delicious juices you can take the whole pan and throw it in a preheated oven or grill until the middle is cooked how you like. (lemon)
