Some cheese makers, who make cheese like Milbenkäse and Mimolette, introduce cheese mites on purpose to give the cheese a particular flavour. BTW these mites are only found on the rind.

Cheese with mites in will have a grey dust on it and can smell a little minty. So long as your cheese is made in clean working conditions then you shouldn't have any mites. Mites are put into some cheese like aged mimolette by cheese makers though.
