Why not? It's an artistic choice.

If you need a reason, the black and white makes it reminiscent of an old movie and the sepia filter used in other parts make it reminscent of an old photograph. They probably wanted to give it a classy, old-fashioned, yet timeless quality. The song IS called Immortality after all! ;)
