@ash3227 it's "hers" not "her's" and some people like the taste of the bitterness when the sugar is burned a little. if you're such an expert, why are you watching this and where is YOUR video?
This recipe tastes great, but i can't ever get the broiling right. I now use a flambe kit from dessertsnowdotcom & it comes out perfect every time. No torching & great aromas
My blowtorch is smaller than that but works all the same. I think it's useful to have a blowtorch in the kitchen. I often use it to caramelize bananas for desserts, same method as creme brulee.
I use vanilla all the time, for pastry cream, custards, cake fillings and ice cream sundaes! You can get the torch and ramekins and vanilla beans at : Chef Depot .com there is a free recipe to make your own Vanilla Extract. The exact torch is the one I use, also from Chef Depot.
If you spritz the sugar with a light mist of water before you flame it, it will carmelize much more evenly. Also a regular blowtorch will provide a better flame than the pencil torch that is on that mini.
Use brown sugar people!

@TheSushiholic : @TheSushiholic : A normal Bunsen burner is quite enough. Or when you don't have one, you can also caramelize it, in the oven ^_~
