what happens there is that the nitrogen turns the water in the leaf in "ice" and when you crush it it breaks down because it is just like that..... take a plate and put water on it... just eough to make a thin layer of ice and then try to bend it... you cant... thats the same thing that happens

Leidenfrost effect will work for only a few seconds. Well technically it will work for longer, but by that point your hand is to cold for you to tolerate. Human skin has a low tolerance for heat loss (cause it freaking HURTS), if it was something like the floor or iron it would work for minutes at a time.

Don't know about 10minutes... the Leidenfrost effect relies on matter evaporating into vapor at such a rate the remainder of the matter will remain suspended on this vapor. For this to occur at a rapid enough pace, there must be a large temperature differential (T > Leidenfrost point).

As the matter is evaporated heat will be consumed. This heat is going to be taken from your hand. There will come a point when your hand is below the Leidenfrost point and you'll get pwned.
