Kazuya Mishima and Jun Kazama had Jin, and since Kazuya left Jun, Jin adopted his mother's last name, and not his father's. Plus I dont think Kazuya and Jun ever got married. Jin was taken under Heihachi's wing where he learned the Mishima Karate Style, but then he chose to erase that style to cut off his Mishima relations and took up plain old karate.
