1- Chef Yan cooking the shrimp chips in hot oil, love to see them "blooming".
2- Serving samples of his daily cooking to front seated audience on napkins. Mmmm!
I borrowed one of his cooking books, followed the recipes in it and it's surprinsingly easy to do. I gotta tell you that cooking Chinese food at home, it's unbelievable how much money you save!
I love him! I used to watch him as a kid. I used to watch all the cooking shows on PBS. I think that is why I love cooking now, and I am a great cook too. You learn alot from PBS.

I've learned that if you don't want to cut yourself while keeping the food from moving, you curl your fingers knuckle side up so that the knuckles of your fingers touch the knife (if they're flat, you WILL cut yourself!).
