@Chef John, what chicken stock/broth do you use? Do you make your own? Or do you buy it from a grocery store? If so, what stock/broth do you use? I'm wondering because you use a lot of stock/broth in your recipes and I'm wondering where you get it from.
Made this tonight! Friggin' amazing! I added a bit more cayenne than CJ because I like spicy food! My potato cook time was much longer (about 35 minutes) than CJ's but I was patient and it was well worth waiting for!!!

@doomonucharlie Half & Half is half cream, half milk. Whipping cream, for the most part is heavy cream as far as the butterfat contents is concerned, though some whipping creams can contain additives that help whipped cream stay that way. You could use either here, half and half is just lighter, though heavy/whipping cream would taste better.

I wouldn't use chicken stock, I would buy a ham hock instead of the slice of ham so the broth would taste like ham. However I do use chicken stock to make my baked potato soup which starts out with a bacon base, so maybe this would work and taste just fine. I will have to give it a try. Thanks so much.:o)
