  • I just made this soup yesterday and today except I didnt use broth and onion and i didn't have ham or cream. But I used tofu and mushroom instead with some chicken flavor still tasted great.

  • I made this today and it was SUPER DUPER YUMMY! I used bacon instead of ham, chili flakes instead of cayenne, and cooked it for a bit longer than instructed (cuz my potato were still hard). You rock Chef John- this is one of the reasons why I will never eat canned soup again :)

  • If you do freeze, shouldn't you leave the cream out? and then add once reheated?

  • I just made this last night with my Christmas ham leftovers. My family absolutely loved it! I didn't have any chives to sprinkle on top, so I used a few pieces of the leaves from the celery stalks. It looked very nice, and the flavor was great, too! Thanks, chef John.   • Ok I made this a couple nights ago and WOW.... it was amazing!! Even my picky husband went back for seconds and asked me to make it on Sunday for him and all his football buddies!! I did stir in some sharp cheddar as it was being served which made it taste like a mashed up loaded baked potato in a bowl.... fantastic!!!

  • @eunit22 the blog says 1 1/2 lbs I think. A bag of Gold potatoes is roughly 2.5 lbs... I am going to make this tonight but I think I want my soup a bit thicker so I'm going to use a few more potatoes than called for. It's all personal preference.

  • So I multiplied the recipe by four (for a family of five) thinking I could freeze some for a future meal. IT DIDN'T EVEN LAST 24 HOURS!!! First everyone had seconds for supper. Then my kids insisted on having it for breakfast. Then they sneaked some to school for lunch. And when they got home they fought over the last bowl. Finally, my husband (he HATES soup by the way) informs me that he would really appreciate eating this soup weekly. WOW! Need I say more?

  • Made this tonight! Friggin' amazing! I added a bit more cayenne than CJ because I like spicy food! My potato cook time was much longer (about 35 minutes) than CJ's but I was patient and it was well worth waiting for!!!

  • @doomonucharlie Half & Half is half cream, half milk. Whipping cream, for the most part is heavy cream as far as the butterfat contents is concerned, though some whipping creams can contain additives that help whipped cream stay that way. You could use either here, half and half is just lighter, though heavy/whipping cream would taste better.

  • I wouldn't use chicken stock, I would buy a ham hock instead of the slice of ham so the broth would taste like ham. However I do use chicken stock to make my baked potato soup which starts out with a bacon base, so maybe this would work and taste just fine. I will have to give it a try. Thanks so much.:o)
