  • Gordon states that you don't season the Mayo until later because it ruins the egg yolks.. yet puts mustard right away in there.. I would assume because the mustard is prepared and in liquid form that it is ok... This is just my common sense based on cooking for over 25 years.. Am I correct to assume this? Well, stupid question I guess, I have made Hollandaise enough to know what elements produce a splitting of sauces...to make this a ceasar dressing add anchovy paste and garlic..

  • @duffauctions Actually, mustard is quite literally an emulsifier. It helps make mayo; all mayonnaise is is an emulsion of egg yolks and oil, and the mustard helps that happen on a chemical level. It also helps your oil and vinegar mix if you're making a marinade; just a little pinch of mustard powder makes a world of difference.

  • Sunflower oil has a rather inert flavor makeup and works well also. Want an amazing olive burger? Use olive oil for your mayo and dice into finished mayo, your favorite olive blend.

  • I guess it seems easier to use raw egg, but it is not that hard to heat up the yolks in water to the proper heat to kill any potential bacteria, this is especially essential in the united states! lol.. but could happen anywhere

  • I hesitate to question the Great Ramsay, but a "neutral oil"? Peanut oil has an incredibly distinct flavor. I would think canola would be more 'neutral'? Oh well, I guess just listen to the master...he probably knows best.

  • Raw egg? Guaranteed salmonella! Try this instead: Place one cup of soymilk in blender. Acidify with 3 tablespoon vinegar. Add one half teaspoon salt. Add one half teaspoon mustard. Add one tablespoon sugar. With blender on high, slowly drizzle in olive oil Until emulsion thickens. Chill.

    I am assuming that is Peanut Oil in the USA

    Since what he wanted was no flavor from the oil, peanut oil does this and is what restuarants in the U.S. use for the same attribute. Its a neutral flavored oil, contrasted by Olive Oil and alike which impart a flavor to a dish.

    The bigger issue for us yanks is english mustard, where can we find that, can Dijan Mustard work?

    Groundnut oil is Peanut oil... thats just how its marketed over here in blighty.

    veg oil will work as will canola, you want to use a flavourless oil for the most part. You can add a flavoured oil - truffle, olive, hazelnut etc etc but it should only make up a small amount of the oil you useor it will not be very tasty.

    Mayo can be made by hand with a balloon mix in a minute or less depending how good your arm is, I know, I made it today at Gordon Ramsays culinary school in the UK! Taking a machine out, setting up, cleaning and putting away take longer than that and you havent even made the mayo yet.

  • @kwiat77 have you ever made mayonnaise by whisking egg yolks? takes at least 10 minutes, my friend, to get the right airiness. I'm surprised the food processor actually worked for this.
