I don't think Jesus truly understood humanity to its fullest. If he never sinned, how could he know what sin really was? He could never feel guilt.

Not according to Paul. Paul claims that the demons (rulers of this age) killed Jesus and killed him sometime when the world was made or thereabouts.
Nowhere in the epistles are the Jews or Romans implicated for the death of Jesus. Only in the gospels do you find that. The gospels and acts are a distinctly different layer (later) of Christianity with overlap, of course.

The teachings that are said to have been from Jesus are good teachings to live by for the most part. Matthew puts those words into the character Jesus' mouth. Matthew then is the one who felt the Mosaic Law would never become void. But Christians are now bound to all of that also since Jesus explicitly is depicted as saying so in Matthew 5:17-18. Not sure it's a later insertion or not.
