I'm confused as to what you're actually portfolio is going to contain but if there are visuals those plastic slits dull your colors down. I'd google some books on portfolios, there are some good ones out there.
Now, on what you've shown. I like book 1. Photography supply places sell additional pages if you need them. But having limits will probably help you focus your content. Use blank paper/simple printed pages to "separate" the sections. (Remember two pages slide into each sleeve, pace the content like a book, with a title page for your sections.) Hi Josh, I like kinda agree with writinads that one probably needs their stuff online. BUT, when you're going in to see someone having a book/prop to organize your thinking and structure the conversation is a decent idea.
