I didn't know the difference between flat-leaf Italian and curly parsley. That's a good tip. The seasonings are terrific in this recipe - did you make up this one, or was it a discovery in a cook book somewhere? Either way, I love this dish. You're such the culinary wizard, you make cooking seem like magic spells :) At least to me.
Although I didn't mean to imply that I thought it was a new idea, and it being traditional doesn't mean that it's a great idea, there are all sorts of traditions that are terrible ideas, like Morris dancing.
