Because capsasin is what carries the heat in a hot pepper, and it is an oil. This oil sticks to your mouth. Hot water rinses it away... Bad part is it hurts, but you don't have to suffer no where near as long and you will notice the difference in minuts. Milk only coats the oil, cold water makes it stick worse.
grow them? where? I thought it was the soil and weather in Assam that makes it so hot. I mean I grow it here in UK and its still the hottest chilli but not as hot as those from the actual place. BTW I come from assam so I guess I can always call someone and get it delivered :P.. BTW respect, I would never chew one to be honest.
