I ride mountain unicycles just like these guys, and they are holding a handle on the front of the seat. This is so that they get more pressure on the pedals so that they don't fall off, and so that they can pull the unicycle up to hop.

Yes. they are holding the front of the seat so that it does not fall out from under them. On flat land this is not necessary but if you are jumping you need to make sure it does not fall.
