There is a local Indian restaurant that makes this and they put it on their buffet. I always eat it when I am there and I wanted the recipe, and here it is! I can't wait to make it. They put carrots and zucchini in theirs and it's marvelous. Thank you for the great video!
come on.. for God sake get over that Pressure Cooker. Can't you cook any thing without the pressure cooker??? . Almost all you videos you have used pressure cooker. Just do some cooking without it.
@ShowMeTheCurry Hey what if instead of punjabi masala, I add corriander powder and follow the same steps that you showed. By the way, I just tried to make it for the first time and burnt it totally. Don't worry it wasn't from your video, just followed from a friend. I will try your method now. Thanks.
This recipe is Punjabi style aloo matar but you can always change it to your tastes. Instead of Punjabi masala, you can add cumin seeds, mustard seeds, turmeric powder and asafoetida to the oil. Add the potatoes and peas and any other spices (coriander powder, cumin powder, red chili powder, etc) and cook covered in a saucepan. A little water can be added to make it saucy. When it is almost cooked, add chopped tomatoes.
@ShowMeTheCurry Ok and one more thing. I will be adding oil, cumin seeds, tumeric powder, coriander powder, water, potato and peas. Can you tell me how much quantity of each should be added for just 1 serving? And is adding tomato necessary? Thanks a lot.
That frozen masala that you pulled out, now, do you have to make that yourself or can you buy it at a store?
Btw, I made your Bhindi Masala a few days ago and it turned out really good. This is coming from someone who has never cooked anything on the stove besides Maggi Noodles.
Heat one tablespoon of oil, add 1 med finely chopped onion and cook until translucent. Add 1 tbsp minced ginger and garlic and cook until onions are golden. Add 1 large chopped tomato and cook until the oil separates.
One technique to enhance this dish is before putting the peas, take out a few of the boiled potatoes on a side bowl, have have a good mash at them and stir them back in the dish. This thickens the gravy sauce of the dish and has a nice potato and spicy flavour to it.
@as9332 If you are using just 4-5 potatoes, the best thing to do is to add some (1-1.5 teaspoon) of cornflour to your gravy sauce (spicy mix with some crushed tomatoes or simply tomato puree) in order to thicken the sauce. The dish will still have a very good flavour to it. Because crushing 'few' potatoes out of just 4-5 will leave you nothing :) . Thanks for asking.
That masala is invaluable. I use it all the time.....i dont always freeze it if i am cooking daily, but i make a big batch on Monday and use it throughout the week and it saves you frying onions all the time. You dont need to add anymore tomatoe etc. You just would add the dry masala like if you make chole..u add chole masala then the wet masala and there you have a sauce.....or for shahi panneer you would use your wet base then cashews and shahi masala...SO HELPFUL. PERFECT
Do you use red potatoes or baking (Russet) potatoes? Red potatoes remain fairly firm after boiling, so they're used in potato salads, whereas baking potatoes become mushy, so they're used for mashed potatoes. What texture are you trying to achieve?
We recently released a video on how to make Punjabi Masala (in bulk). It is basically a combination of onions, tomatoes, ginger and garlic that is the base for many North Indian recipes. Unfortunately, it is the most time consuming part of cooking. We show how to make this masala in bulk and freeze it so that you can cook in fraction of the time normally taken. Look for "How to make Masala (in Bulk)".
Yes, heat oil in your pan. Add Onions and cook until light brown. Add Ginger/Garlic and cook for few more mins. Add Tomatoes and cook until the oil starts to separate from the mixture.
