The first time your game didn't quick save,

Quick save just the exact time when you died.

I had the endless death loop happen too! I was in werewolf form and had just killed one bandit dude, with semi-low health, and saved. Soon as I came back out the leader killed me with a power attack animation... So much progress lost! I now have auto saves off and need to consciously save frequently.

I had this happen, too. xD And it wasn't my fault (entirely), it was the game that saved- I was low on health, and I think I was on fire or something so still taking damage and walked through a door- I died the second I got through that door, but the game auto saved. ._. I had a similar reaction to yours. x3

toby, there is technically a cheat code in skyrim if u havent already found this out (meaning someone told you in the comments)

press the " ` " key next to the 1 key and type "coc qasmoke", then enter it teleports you to a room with all the items in the game in boxes. to get back, press ` again, and type "coc" and then either "whiterun" or "riverwood". those are the only places i know, but im sure there are more PEACE OUT! BOOP! WHATEVER YOUR OUTRO IS!
