I remember my grandparents used to make something similar. They would strip the skin from the meat, fume it, spice it, and let it dry. They didn't have a freeze. Whenever you wished to eat a piece of that, you would just go, cut a desired piece, boil it for a little while, spice it some more, depending on your taste, and eat it. Delicious !
