  • Expert village should make a tutorial of videos showing how to label said videos.I just hope they label the parts in the tutorial......otherwise the effort would have been for nothing.

  • Please note this recipe would not pass in a restaurant. It is not technically a Mousse, but to the average person there would be no difference.

    The better mousse is as follows:

    Melt the chocolate in the same way as last time. but this time add vanilla extract or even better vanilla pod if available (optional). Then seperate the egg yolk from the white. Whisk the white again at the end and add caster sugar. then fold the two components together, place in the fridge for minimum 1 hour.

  • Once you have melted the chocolate. Whip up DOUBLE cream, the higher fat content the better your mousse also whip the cream at the very end, you don't want to be loosing air out of it during the other processes. Add caster sugar to the cream (caster sugar is important. The particles of granulated sugar are too big meaning you actually feel the crunch of the sugar, you don't want this) Then simply FOLD the cream and chocolate together. Then chill for 30 minutes, roughly.

    I'm a Sous Chef in a Michelin Star Restaurant in Scotland. People always over complicate chocolate mousse, it is not a difficult dessert to make. Here are two recipes that are very easy and produce good results with minimal effort.

    This recipe is useful if you are cooking for family and friends who will not criticise you to much.

    Melt the chocolate in a Ban Marie (bowl over SIMMERING water, smaller the chocolate is cut, quicker it melts.) -continued-

  • Sorry, but this is insane! After spending too much time piecing the puzzle of this together, (and truly, this could be soooo easy!) I am not certain if I missed it but I don't believe she ever stated how many egg yokes go into the chocolate mixture. This women needs a new producer! So, I will do this with the 4 egg yokes but will be totally pissed if after spending this much time, it doesn't work out!

    i know theres some pasterized egg whites in local market. but i didnt see any pasterized egg yolks.

    question is theres still some chances of getting "salmonila"? virus from fresh egg or yolks? why is every one so interested in having a mousse cake?

    or most customers just not knowing the facts that we are using fresh eggs/yolks, instead of just whipping cream+chocolate?

    i used to work at a restaurant, the chef make mousse using fresh egg.

  • use heavy cream or whipping cream. if you use heavy cream you may want to put in a dash of whole milk as it can help prevent you from over whipping the cream.

  • with some minor changes you can use this recipe also for chocolate moose. Only thing u need in addition u need a moose.
