I think this is what is going on.

Demon slayer constantly complains about how he's thirsty and Mercedes gives him a few options to quench his thirst like get a glass of water or find cannon shooter. However, is seems like Demon Slayer only drinks blood, as implied by how Slayer in the beginning was crossed out with blood sucker.
