I think part of the jumping and kicking stuff was because he was 'new' to the general American public. Like showing him off etc. Nowadays most people know what to expect from him and there's no need for him to do it.
Yeah Jackie Chan introduced hand to hand fighting in Hollywood. Before it was mostly Stallone, Schwarzenegger and Bruce Willis and everyone else with guns going around and killing people. Then Jackie Chan brought in fighting and now almost every action movie has a bit of fist fighting.
I really like the choreographed fighting in his hong kong films. They got that rushing and funny feeling to it. I hope to see that in some future american film with him in it.
