I've always had Chelo Kabab with raw eggs, and never without! when you mix the eggs with the rice it gets cooked with the warm rice, right in your own plate! it's sooooo good! It's a pitty that Persians have forgotten about their own traditions!

Salmonella dies at 150F or 65C; so adding egg yolk to steaming hot rice and mixing it with the hot rice quickly kills the salmonella. I always eat Chelo Kabab with egg yolk and it tastes great.
Just warm up the egg before use (put the egg in warm water 50-60C for 10 minutes) and mix the yolk with the rice when rice is still over 70C hot.

What's with these people?? Some say they never heard of it. I've had the yolk with the rice plenty of times. Keep in mind, when the rice is PIPING HOT, it cooks the raw yolk. It's the best way to do a nice Soltani Chelokabab.
Ive had chello with raw egg... and that was in Kensington, London. Upananda restaurant, best food in town, served by luverly people who can cook delicious food while you watch them cook fresh bread in the tanoori. Peace persia ;-)
By the way the first time I saw it, it was in Mashhad, they have big ass "shishlik" kababs over there in "kooh sangi" and they eat the rice with raw egg
