I did some research on the Ortolan Bunting. It turns out that everything Roger said about preparing, cooking, and eating the bird is actually true. The ortolan is a French dish but since the bird is an endangered species its now illegal to sell them in France, but not to eat them. This honestly makes me want to try the bird now.
