Yea i've taken both of them in the past, 1. was from LGA to Fort Lauderdale in 2003 and 2. JFK to San Juan, Puerto Rico in 2005 it's both cool!!!

i've seem them a few times before here. but at that time, i don't think they were used on routes to LAS. but i'm very positive jetBlue does not operate their EMBs to LAS.

a lot of airlines taxi on one engine and i think jetBlue is one of them. it saves on fuel costs. so what you heard was engine #2 starting. hope that helps
