There is (was?) a company who sold something like this... but they cost an arm and half a leg to buy...

very inspiring! You could open up that keyboard and set the arduino inside leaving relevant ports exposed so there would be no cables to deal with in use.

You could even add a small screen, wifi card and have it run linux + emacs and send your text files to a remote ftp server... but you would need more than an arduino i would think to manage all that.
