The technology back then wasn't up to the standards of today. The composition of the metal used was greatly compromised by the many impurities in the iron during processing. These impurities made the metal very brittle when exposed to extreme cold. The Titanic's hull didn't "slice"...the plates buckled and the rivets holding the plates just popped out. The ship was doomed as soon as it hit the berg.
