@ChefWannabeToo you probably could freeze the dough but frankly it usually doesn't sit around very long in my house so I've never tried it. If you do freeze it you would need to thaw it for quite a while to get it back to consistency and rise a bit more. Might just be easier to make it fresh. I have seen "friendship" bread frozen though and that isn't much different than this as far as consistency. Let me know how it works if you try it.
@howardthecpa Time, bread quality -when you don't knead you get big puffy "holes" all over in your bread. That and when I knead I don't like to use the mixer I do it by hand.
