Well, at Very Hard they use Death Moves all the time, do bigger combos, defends and teleports your attacks all the time, and those things

And the 3 bars of health is the normal for almost every character not customized

Some have 4, and others have only 2

I guess it's not possible to customize characters in the story mode

Dude you are really great at this game. You could probably play this game competitively. You'd rape me and my friends. But I do have on suggestion. You only used the rush move once, if I had been playing that probably would have been the only move B2 move I used. Still though you don't have to take that into consideration because you are way better than me. Good match I can barely beat 3v1

You can see a really old video in my account that I'm using Ultimate Gohan lvl 8 against Super 17, Omega Shenron and Gogeta SSJ4 lvl 122 in the hardest difficulty

You can't even compare those versions, this one is much better
