I made this last night. I totally agree about the cinnamon and nutmeg. I found another recipe online and it called for 2 tsp. of cinnamon-used 1 tsp. Used 1 tsp of curry powder.
I didn't have lemon either, but I will use it next time.
I chopped and peeled it. I added the spices to the onions and let them bloom. Then I added the squash, a couple of peeled apples and a couple of carrots. Sauteed them and then added chicken stock.
Just in the oven at about 350. Season with salt and pepper, whatever herbs you like (cinnamon and nutmeg are good... go easy) and I put a bit of honey on there. before roasting.

Man, oh man. I'm bummed I showed up too late for dinner. It was GONE!
How do you roast your squash? Broiler?
And--Do you season before you roast? After? During? All of the above?
