  • I made this last night. I totally agree about the cinnamon and nutmeg. I found another recipe online and it called for 2 tsp. of cinnamon-used 1 tsp. Used 1 tsp of curry powder.

    I didn't have lemon either, but I will use it next time.

    I chopped and peeled it. I added the spices to the onions and let them bloom. Then I added the squash, a couple of peeled apples and a couple of carrots. Sauteed them and then added chicken stock.

    Delicious!

    I didn't think I'd like it.

  • @chrisjdd Apples! That's a great idea! I'm going to try that. Curry powder sounds awesome as well. :)

    How do you roast your squash? Broiler?

    And--Do you season before you roast? After? During? All of the above?

  • Just in the oven at about 350. Season with salt and pepper, whatever herbs you like (cinnamon and nutmeg are good... go easy) and I put a bit of honey on there. before roasting.
