  • What would you usually serve this with? I'm from the U.K. so I've never heard of Spoonbread, never mind tried, cooked, or know what it goes well with. :)

  • Hi Betty :-) I am from Mexico, got married and relocated in Georgetown, KY. My husband was a waiter at Boone Tavrn back in the 90's, he was a student of Berea College. We just celebrated our 2nd anniversary @ the Boone Tavern. I am very picky about food, didn't like our dinner, but the spoonbread was good. I made this recipe ystrday, gave it a little twist using gluten free cornmeal and blend the mix for 10 min on high speed, instead of 15. It was so delish, better than the original. Thanx! :-)

  • Betty, should the spoon bread be dense in the middle and not fully baked. Or should it be like Jiffy Mix or Martha White cornbread mix. Light and fluffy?

  • @grandmacheapcheap It should seem like it's not fully baked; it does not have the texture of Jiffy Mix cornbread at all.

  • Betty, I'm guessing you must be in Richmond. I don't know if you've ever been to Sunny Valley Bulk Foods, down on South Fork in Casey County (formerly Nolt's Bulk Foods), but you should be able to get Watermelon Rind Pickles there. They also sometimes still have the Mennonite Community Cookbook, which has a recipe in it for watermelon rind pickles.

  • Spoonbread is a wonderful VIRGINIA recipe. It was invented in Virginia and its very good with gobs of butter. Created on George Washingtons plantation.

    I have heard of Spoon Bread as I am from KY also but never had. I certainly will now as this looks so good almost like a souffle'. Have you ever added finely shredded cheddar cheese to it? Wow just can't wait to make this....

  • I am Southern Born & Bred but I don't ever recall hearing about Spoon Bread b4? I know for sure that I have never tried it b4. I watched ur video b4 this one & to me it is just alot like cornbread?

    Isn't it funny how every state & areas within that state is famous & known for sumthin? I live in Martin TN, home of University of Tennessee at Martin, & Martin is known for Soybeans. We have a Soybean Festival here yearly around Sept. :)

    I luv just bout anything pickled like those rinds!

  • @1970sarteaga Berea, KY has an annual spoonbread festival.  I have a video in bettyskitchen of the fall, 2009 festival. (I had never heard of soybeans being famous! Sounds wonderful!)

  • I'm baking some non-cornbread bread.

    The rescipe calls for me to cover the dough with a tightly-woven towel before puting it in the 'fringe to rise.

    Should I tie it around the bowl?

    And if so, should I tie it tight, or loosely?

    Mmmmmm. . .I've never ever had it, but I have read about it, and it sounds simply heavenly!

    I've never had the watermelon pickles either. Are they a sweet pickle? I'm intrigued.

  • Spoon bread is "heavenly!" That dish should feed about 8 people--so, just have 1/8 of it at a time (unless you skip something else!) The watermelon rind pickles are syrupy sweet. They are delicious; I can't compare them to anything--nothing else tastes quite like them! Thanks for your lovely comment!

  • I never had spoonbread before. My grandmother was from South Carolina and she never mentioned it. I love hot corn bread with milk poured over it like cereal. Is this the same taste as cornbread with milk?

  • I have had cornbread with milk--and it's good, but nowhere near the taste of hot spoonbread with butter! I hope you get a chance to try it!

  • I live in the South (Florida) and have surprisingly never heard of Spoonbread before. I am most definently going to have to try it. It looks delicious! Thanks again Betty for another wonderfull and yummy looking recipe =] Oh and P.S. I love how you tell us about the history of different places and dishes, like this one and when you went to the original Kentucky Fried Chicken. It's fascinating to learn about the history of some the foods we eat.

  • Hi! If you video is too long, YouTube won't accept it--10 minutes is supposed to be the maximum length, but I have gotten by with almost 11 minutes. Also, if your internet connection is very slow, your computer may time out before your video uploads. You would need to save your file on disk and go to another computer. I hope this helps!

  • Thank you for posting & sharing the recipe. Does this taste alot different than regular cornbread? This looks like alot more is involved than just the regular, which I am used to.

  • Hi Mera! It does not taste a lot different from regular (KY-style) cornbread. Its texture is different, much lighter and fluffier! Thanks for your question!
