  • The Japanese method of making a fish broth is to put the fish directly into the water and then just filter the broth through a sieve and then continue cooking. So that should work too.

  • Thanks. hm... it wouldn't have as deep taste using just vegetables.  But, maybe you can try traditional vege broth with onions, carrot, celery some nice shitake mushrooms?

  • the use of anchovies is interesting. i guess every asian except chinese use anchovies as a broth base. i've seen it in vietnamese, thai, japanese and now korean.
