  • You can use vanilla extract to make ice cream but it won't have the brown flecks of seeds that good vanilla ice cream has. If you want the flecks, get vanilla paste instead. It is thick and gooey but the vanilla flavor is more intense. I use the paste when making chocolate desserts and fudge sauce as well because it really brings out the chocolate flavor, adding a nice taste dimension.

  • So this is what Vanilla processing is like. Wow! When people make Ice Cream out of Vanilla; does the Ice Cream come out white? Do you use Vanilla Extract to make Ice Cream?

  • 99% of most of the vanilla ice-creams use synthetic vanilla which is a transparent soln. Natural ice-cream could use vanilla extract (dark brown liquid) although most of the premium grade brands use vanilla powder (specs of dark brown in the ice-cream).

  • Interesting. I always wanted to learn about vanilla processing. Something I want to pursue perhaps someday in the future but in a smaller scale. Great video.

  • My dad had devised a method of extracting essence from vanilla without using any solvents like alcohol...purely organic... It hasn't got an impressive shelf lif though... and the aroma in not that very impressive either... but it could be a promising method.. He hasn't let out the so called secret to me yet... It had come in the news papers and the extract was sent for testing the composition and its all fine... is there any particular way to get the aroma out...I am also from Kerala (Calicut).

  • They are boiling them in water as part of the curing process. The boiling has nothing to with making an extract - which is what I presume is with the ratios you have indicated.

  • I always use vanilla beans. This is a great video. I once bought a bottle of organic indian vanilla extract from Frontier Coop. It was great. Thanks for posting this.

  • Vanilla extract is made from alcohol and is not very useful in baking as the alcohol evaporates. Stick to vanilla powder or pods.

  • Thank God. Keep it as far away from the vanilla as possible. I think vanilla milk is a good way. Give some plain milk, then taste the difference with sugar and vanilla. Extra vanilla ice cream wood be good. Breyers ice cream is all natural, just 5 ingrediants. Cookies are a good use for vanilla. Vanilla cookies. Mabey you could strike a deal with Nabisco for an all natural extra vanilla wafer. Please send me a gallon of vanilla for the advice. I love it so much. I'm vanilla's biggest fan.

  • Curry, on the other I cannot stand. I'm glad they got the right idea with vanilla. Please stick to the vanilla. Any good recipies that don't have curry in it?

  • Vanilla is rarely used in any curries. Its main use in a baked products - cakes etc.
