  • @kapachangos sumak (in turkish) is a spice with sour taste. it's widely used in many recepies. you can google "sumac".

  • @Lmourad arabic word turkish food. ottomans used a variant of persian script and used many arabic words. It's called ottoman turkish. The script changed to a latin alphabet form, in 1923.

    That's when they started removing Arabic words from their language, right? About half the Ottoman language words (not the grammar or language itself) were Arabic in origin. But they did have their Turkish counterparts which were still used in Central Asia. So there was a movement to go back to Turkish.

  • @konqueror1 I am Armenian, but I wouldn't give this a "dislike". This stuff is great, right along the lines of what I consider good food. It's just that I know that what's "Turkish" is really a composition of Armenian, Arabic, Greek and some of Eastern European food (pick any Turkish dish and trace it back, you'll end up with one of the above sources). That's why I actually do like "Turkish" food. When an Armenian or Greek restaurant is too far, a Turkish one is usually a good substitute ....

  • @mardamek1 Most famous Turkish food recipies mostly comes from the Ottoman court culture. They are all in the archieves and documented. "The Armenian, Arabic, Greek and some of Eastern European foods" were mostly peasant foods and believe me the Ottomans would never eat any peasant food in the court. Those foods diffused from the Ottoman capital to the periphery, that's why you can eat the same food in Belgrade, in Yerevan, in Baghdad or in Yemen.

  • There use to be a great Turkish food restaurant/cafe in my hometown where they made a DELICIOUS pizza-like thing called pides. Unfortunatley not everyone recognized how brilliant the food was an it has now closed doen, and there are unfortunately no other Turkish food places nearby. Does anyone know a recipe for pides? To make it even worse, I have recently found out I am gluten intolerant, would a gluten-free crust work?

  • @globetrekker86 you can buy mascarpone cheese, which has a creamy texture just like kaymak. Kaymak is more fluffy but mascarpone is as close as it gets. I live in the US. When i cant find kaymak in the middle east stores, i usually buy mascarpone from a supermarket along with a french baguette. Spread some honey on mascarpone and enjoy!!!

  • @duygu4ever Great idea! I also live in the US, so I know what you mean. The range of ethnic stores here is astounding. Also, I am a fan of mascapone (esp. in tiramisu), so definitely will go out & buy some. Mascapone together with honey? Sounds tempting. ;)

    Also, a classic (when it comes to cheese combined with honey) Just grab a nice baquette or kaiser roll, fill with goat's cheese, dunk walnuts on top, put in oven for a while, and then drench in honey, hmmm. xD

  • @duygu4ever kaymak isn't cheese it's cream. look for clotted cream its pretty much kaymak, but tastes no where near as good.
