Trade or assign a player to a team with another player that has the same number. Keep doing it until you get your desired number.

Dont know if you still play this but you can change numbers by trading players or assigning them to other teams. To change Kobe from 8 to 24 assign him to a team with a a player who wears the number 8. You do this until you get the number 24. It will take a while but its worth the time if you value realism.
