Kimchi home made is normally sweet tasting and only tastes sour if you leave it for several months. Korean kimchi is more spicy, Japanese is more sweet. Even though I'm Korean, I prefer Japanese kimchi because it's super sweet tasting.

Two things. Nuka is also "Bokashi" in the composting world and is insanely good for the soil. Second, I think she's wrong about pickling without salt. There are methods that are way more difficult but pickling with whey or kefir not only uses less or no salt, it has a wider range of bacterial flora

She may already have it but... a very nice kind of kimchi called "moohl kimchee" (translates into water kimchee) is absolutely awesome. The brine is made from salt, hot peppers (jalapenos or anything else), long onions and garlic. It has some veggies like daikon and chinese cabbage, but the real star is the brine. ya eat it like any other kinda kimchi, as a sidedish, but the brine that you drink is what makes the kimchi wonderful - spicy, tangy, sharp and refreshing~~
