Short answer: This is just a small part of the Ikkaku ryu system. There are counters for many types of strikes in its whole.
Long answer: If one were to include every possible concieved attack to defend against, the system would be so large it would be impracticable to learn. Think of it as learning to drive a car: You learn alot but mostly you learn how to drive on your own and take things from there depending on the situation.
I'm impressed about how precisely he evaded the cut to the ankles. In normal speed there's no much detail, but in slow motion one can see how precise was in time and space.
