OKay, Now I am sick with jealousy. My eys are green. You have amazing talent. Do you give lessons? What books have you read. Were did you learn to do this? Where do you buy your equipment? What was that little oval knife thing that you used to add detail to the leaves?
that tool was a gift from a friend years ago. i wish i knew where to get it too, because everyone wants that tool!! you can also try a v-1 cutter in place of that tool, the results will be similar. I never took a course- i just watched fruit carving videos and practiced a lot. i started carving with my first video last year some time. don't be jealous- you can be better than me!!!
@bibbeny i know you posted the question a few years ago but i just got a tool that looks similar to this. look up ceramic and wax carving tools you might be able to find one with the reverse teardrop head like chafchang has. i got a little set that is square head, round head, upside down triangle, and upside down teardrop with a bigger and smaller one on each side. shape of the teardrop looks similar but smaller and handle is all stainless but i bet you could look around and find something clos
@bibbeny if you can go to amazon try typing - 4-piece Stainless Steel Wax Carving Tool Set, Hollow-shaped Heads or 11-piece Pottery / Sculpture Tool Set, Clay & Wax Carving Tools or ribbon tool or loop tool. i tried it just now... my first attempt...it worked similar... now the carving is an other story ha ha nothing like chef chang's beautiful carving but, I have to aspire to something. next time ill try bigger and less ripe papaya! i ended up with something resembling a flower in a gooey mess

the leaves part was carved too deep, so it reveals the papaya seeds. papaya is a fruit which u need skills to carve or else it reveals the seeds.
