Actually, Darwin did sort of dream up evolution. He wanted to explain something, so he combined a few ideas and added in some of his own thoughts. It was then accepted as being logical and factual. Not too different from how most religions are created; evolution is just way more believable.

Ask them politely to define exactly what "God" is. A good way to direct these pointless interactions is to (as you stated) put the burden on proof on them. The best way I've found is by asking questions as such.

Get a Moslem to disprove Christianity (and they can).
Get a Christian to disprove Islam (and they can).
Use this method for all other eligions.
