I've actually had a few moments I wish I'd been recording, a lot of them were on my laptop though as CoP has been broken for two years (was right the first time, heh) on my PC. One time I did the hospital mission in Pripyat just as the fog rolled in, got cut off... had to go about with the APS trying to clear the place out alone, then some bandits turned up. As you said, that makes it too easy - killing enemies is as simple as finding them and lining up a shot, and players are almost always more cunning than the AI. They will often find a way to lure enemies out one at a time and kill them before they can mount an effective defense. This is especially true of experienced players, like us, who usually know when and where to expect enemies. Finding an ideal middle-ground is the hard part. I think I spent more time balancing that than on anything else.
I agree completely about the importance of balancing weapons. In the unmodified games, weapons are underpowered and inaccurate, which is frustrating and makes the weapons feel unsatisfying to use. A lot of mods overcompensate, though, and you end up with "realistic" weapons which have laser-like accuracy and drop just about everything with one or two shots.
