Hang the fucking thing up and bone out both legs at once its easier cos you wont fuck ya knife on the Aitchbone ball joints as easily. it takes 6 cuts to Aitchbone lamb legs and can be done in 15 seconds then trim up a leg, tunnel bone it shank on rump on. do both and all up 2:00 minutes tops to do it with time to steel your knife before the next one comes along. Aussie Butchers are by far the best at lamb, that end product looked crap, how loose would that be! Get rid of that netting, give it some strings and then give it a nice bounce test on the bench. I didn't think the meat left on the bone was really worth going on about that much, yeah there was a bit, maybe 30 cents in lamb mince if you scraped em..... But I guess they wouldnt go through anywhere near as much lamb as AUS, so its probably not gunna add up to much GP lost.

OK This is not how us Aussie Butcher's bone out a leg of lamb, that leg of lamb had been out for more then 30 mins prior to manufactoring. u can tell that by the sweat on then skin of the leg. The end presentation would not be sold over here.
