Sear first? THUMBS DOWN When you put meat to heat it contracts. Being like a sponge, juice comes out. Cooking over indirect heat keeps juices simmering inside. Searing after is like basting while searing (I usually splash with worcestershire right before searing). Just try it.
@dstein111 There’s no one answer when using a gas grill because the burner array can be from front to back or left to right. The thing you want to keep in mind is that, for searing, you want half the burners on high and the other half on medium-high. Sear directly over the burners on high. After searing, turn all burners to medium-high.
@pewmanfustudios You’d want to use a high quality everyday Extra Virgin Olive Oil. Definitely don’t use a finishing oil. We like Zoe Extra Virgin Olive oil for this application.
@razorzzzz I heard that Spain makes the best olive oils now. Oh well, I would love to have a bunch of these olive oils in front of me for a taste test. I am sure they are all great for one thing or another. I asked Lobels what brand they used because I was curious to what they liked.
@awaii90210 You could use clarified butter in place of the olive oil. But make sure it’s clarified—also known as ghee. Whole butter has milk solids in it, which would burn and turn bitter if seared with high heat. Or if you'd rather, you could always sear with olive oil then serve your steak with a pat of compound butter on top!

I would assume to do this over a grill you would pre heat the grill with just the back burner on then sear on hot part and move to indirect part?
