Its because the sugar in the mentos mixes with the carbon dioxide in the coke and creates a reaction.

did anyone watch mythbusters on this, he's talking out his ass on this, it has todo with the aspertame thats found in diet soda and the imperfections on the surface of the mentos itself, thats why you cant use fruit mentos, it's about oxidation......its a cool trick, but get the science behind it right.....
