I like this better than the NYT version. Personally, I think its easier and you achieve more consistent results. The beer/vinegar components are just clever and add a great element of flavor.
I've used this method several times each time getting better. I use Killian's Irish Red beer and typically use the addition of whole wheat. I have yet to try the original no knead recipe.
Gee, what will I ever do with the rest of that beer? Hmmm....

Do you have to refrigerate the yeast or can you keep in in the pantry?

I store it in an air tight container in the freezer. Keeps a very long time that way.
