1. The Colle system is played by people who can't be bothered learning openings 25 moves deep. You can do the same set up against pretty much anything.
2. Some variations of the Caro Kann are extremely complex and well worth memorizing 25 moves deep.
3. The position after 1. d4 d5 2. e3 Nc6 3. Bd3 e5 4. de Nxe5 is obviously like a reversed French Defence.
4. The openings you describe are not typical of booked up players.
5. Caro Kann/Centre Counter pawn structures are unbalanced!

Lets take the Caro- chan for exsample, played by 3 world champions, particually anatoli karpov. you are right the caro chan is desinged to minamize risk, so that thir is minamal counter play. but say you are in a knockout tornament , and your oppent is better than you and a very agressive player, and you force draws repatedly, eventualy he will make a mistake that you can capitalise on.
