eww no offence, that looks pretty gross. japanese curry should be thicker and darker. that looks like Hayashi Rice which is similar to curry. your instructions are different from everyone else's tutorial on curry making as well. i'm also sure you're supposed to mix the paste with the boiling water.
While you can find this curry mix in most supermarkets, if you have an Asian market within reach, it can usually be found much cheaper there.
Personally, I caramelize the onions first, then add the chicken, brown it, then add the potatoes and carrots. You can add water instead of stock, or use tofu cubes if you aren't a meat eater.
@tisha4sango - Yes, you can use curry powder instead of curry paste but the taste will be different. Depending on what curry you are after and if you are using curry powder, it'll probably taste nicer with some coconut milk (More Malaysian curry). Enjoy cooking!
