but I do think they breathe too much - after every two bars is a bit excessive when they are singing the melody.

I agree about the breathing but bear in mind young boys need to breath more. They have a much smaller lung capacity and to make the sound they are making they need solid support and a lot of air movement which uses lots of breath. I quite agree about the descant though: the key to good singing is to make it look as if anyone can do it. That's why us singers tend not to be appreciated for the work we do!
