Beef shanks, and oxtails. What two great and under appreciated cuts of beef! I have already made your oxtail soup, and your "Beef Merlot" stews more times than I can remember. They are sooo good, I refuse to eat them at work, because I don't want to spoil the experience there.
After I make this the first time, a little red wine might fall into the pot the next time around. :D

You can probably use beef shoulder (chuck) for this, but shanks are relatively inexpensive and should be fine for a beginner cook.
