Actually, we do use filtered water to drink, the water here in our Barrio is pretty mineral heavy. I was using water from the tap to "wake up" the mate because it's easy to be precise with keeping some wet and some dry using a trickle from the tap. It's only a trivial amount.

As a side note, almost every mate drinker from South America you will encounter will swear up and down that tap water is the only water to use...that's just how they do it :) Thanks for the love!

Alright, I have to speak my piece on this as a serious mate drinker and biochem major. "Mateine" does not exist. It is straight-up caffeine, but combines with other stimulants in the mate (called xanthines, of which caffeine is the most famous) to produce the same stimulation but less of a "crash" effect. I couldn't tell you exactly what's going on chemically, but caffeine combines with other things in mate that are not present in coffee, hence different results in the body. Hope this helps.

While not everything is understood about Mate, because no one has explained why it is so good, yet without almost a single negative effect, people need to realize that there is no chemical stereoisomer of Caffiene called Mateine. Interestingly it's been reported that Mate is actually also a MAO inhibitor, & in addition to the Theobromine might explain it. A chemist will explain why it's impossible for Mateine to exist though.

The green powder is a type of mate generally labeled as "elaborada," which contains mostly leaves and very few twigs, and is thus stronger than standard grade maté, which was seen in the large bag. It is wise to begin on the standard maté and graduate to the elaborada as taste is acquired. Typically Hispanic markets will carry both types.
