I actually really really like Nathan Copeland's fight; it's probably my favorite in the game. The guy was obviously mega-prepared to fight you, he's got a great character, and the hazardous environment's an awesome gimmick that forces you to think about what you're doing instead of just mindlessly slashing.
You can actually buy Tsubaki right before facing this guy. Also, little bit of trivia, Suda intended him to be in the first game, but couldn't for some reason. They were pretty happy that they made him the first boss of the sequel.
