We can observe evolution happening in the lab but in the wild, with many examples of speciation found in the wild. Real biologists (the ones who haven't got their degrees from diploma mills) don't make a distinction, it is only an imaginary distinction made by creationists. Both describe the same process, but if you want to be pedantic, evidence for it would include Oenothera gigas found by de Vriers as early as 1905 and Primula kewensis. This can be found in the scientific literature unlike the claims of creationists.

Most cosmologists agree that the Big Bang occurred 13.7 billion years ago from which the universe as we know it came to be, and we know this because of the uniform distribution of CMB, red-shift etc. The fact is, we don't know everything, atheists admit that; Christians believe they have an answer, but it is not based on demonstrable evidence or logic, and so your strawman is wrong
