I have the same problem. I can't get past the first leg ridge. Every time I've tried, I keep falling off to the ground. A third way to get on him is to get him to look into the doorway you enter, run out and grab the hanging decorations on his head, move around to outside his head, the keep jump grabing your way to the top of his head.

Right when you hit the horse it leaps forward even faster then just holding x. So if you keep doing it over and over, you keep getting that split second speed boost over and over. Ari was doing this as a speedrun, so he was shaving seconds off in every way possible.
